Big S Farms - RecipiesCaribbean Chicken

Ingredients:

  • 8 chicken breasts (skinless) or equivalent tenders (boneless is best)
  • 1 quart - Pineapple Juice
  • 1/4 cup - Key Lime Juice
  • 1/16 cup - Tennessee Thunder Hot Sauce (or to taste)
  • 1/8 cup - Honey

Directions:

  • Combine ingredients in a plastic ziplock style bag and place in a refrigerator for 2 to 4 hours before cooking
  • Get grill hot with the lid closed
  • Place chicken on grille. Use juice from the marinade to baste chicken. Turn once.
  • Cook until meat is white throughout. Can be served over rice or on a bun for sandwiches.

Ingredients:

  • 1 cup - Apple Cider Vinegar
  • 1/2 gallon - BBQ Sauce (your choice)
  • 1 tablespoon - minced garlic (more if you're brave)
  • 1/4 bottle Tennessee Thunder Hot Sauce (we add 1/2 bottle or more to ours)
  • Black Pepper & Salt to taste (use kosher)

Directions:

  • In a big ziplock bag or covered pot, conbine all ingredients. Coat the pork thoroughly and let stand in the refrigerator as long as you can. Overnight is good.
  • Get the grill hot. Sear meat on all sides, then turn the grill down to about 225° - 280° F. Cook until the meat nearly falls apart.
  • Let stand 15 minutes before carving.

Ingredients:

  • Your favorite cut of steak
  • Choose a red wine that you would like to drink with your meal. Sweeter wine goes better with chiles.
  • Plenty of black pepper
  • Salt to taste
  • Tennessee Lightning Hot Sauce

Directions:

  • In a large casserole dish, cover steak 2/3 with red wine, lightly salt and generously crush fresh black pepper over steak on liquid. Crushed garlic can be added if desired.
  • 2 dashes of Tennessee Lightning.
  • Let stand at room temperature for one hour before cooking.
  • The grill should be hot and the steak, depending on the cut, should be cooked medium to medium rare for 3 to 6 minutes per side.
  • Remember to only turn meat once. Serve with grilled vegetables.
